Summer pesto – almond, mint, lemon and goat’s cheese

Today it feels like summer is finally on its way! The sun is shining and there’s enough blue sky to make a pair of trousers for a hundred sailors. It’s the kind of weather that makes you want to sit outside with bare feet and a glass of chilled white wine, a bit of Jack Johnson on the radio and something good to eat. While a bowl of pasta isn’t perhaps my first thought for a summery evening meal (I tend to think of it as a bit heavy and more of a wintery comfort food), when combined with the lighter flavours of spring and summer it can be fresh and delicious.
